Re-Doing the Emulation Station Controller Setup

I can’t seem to ever get it done correctly. Things seem to skip too quickly to the next button.

Is there a way for me to do this MANUALLY by editing a file somewhere for the Emulation Station first-time setup screen?

Does this controller setup affect anything else like the emulators?

if it skips to next button due to controller sensitivity, when you get to “ok” you can go up and correct the bad inputs without starting from scratch.
