Help with resolution issues

So Im new to RetroPie (just got my pi a few days ago) but Im having a slew of issues. I figured out how to fix the aspect ratio so I can have it close to 16:9, but my biggest issue right now is that I cannot get PSX roms to look good. With some research I found out that the emulator is set to a very low resolution, but I just cannot figure out how to to change that.

Also, Is there a way for me to add Retroarch’s RGUI (the F1) menu back in? Most instructions I find out there make every setting seem so simple when that existed.

You can change the resolution the emulator kicks into in the es_systems.cfg
